This wild ale was fermented on Chardonnay lees from Mac Forbes winery in the Yarra Valley. Unique to this beer, we employed the Btonnage method of lees stirring the same technique used to bring texture to traditional Champagne. After almost 2 years in French oak barrels, we added fresh, whole pitted peaches for a complementary dimension of
